As soon as the first olive oil comes out of the mill, in the evening \u2014after a tiring day\u2019s work in the olive grove\u2014 when we return home, we open a little wine, usually of the <a href=\"https:\/\/www.greeceandgrapes.com\/en\/variety\/kidonitsa\" target=\"_blank\" rel=\"noopener\"><strong>Kydonitsa<\/strong><\/a> variety, an excellent grape cultivated in the region of <a href=\"https:\/\/monemvasia.gr\/?lang=en\" target=\"_blank\" rel=\"noopener\"><strong>Monemvasia<\/strong><\/a>. Alongside it, we put olives, the fresh olive oil, and bread on the table, just as you see in the photo. It is the ideal way to unwind and, at the same time, a confirmation that the year\u2019s hard work has paid off.<\/p>\n<p align=\"justify\">This small ritual is not merely a gastronomic pleasure; it is a way of measuring time again through the cycle of the earth and our labour. The aroma of the fresh oil, its sharpness, the warm bread absorbing it like a sponge \u2014 all of this creates a moment that carries memory, family habits, and a sense of continuity.<\/p>\n<p align=\"justify\">The first taste of the new harvest is also a silent promise that, despite fatigue, difficulties, and uncertainty, the land continues to give back.
